Jamie’s Eggcellent ‘Muffins’


  • 6 eggsDelicious Flourless Muffins
  • 1 onion diced
  • 1/2 red capsicum diced
  • bacon diced into small bits (or meat of your choice)
  • 1 1/2 tablespoons natural Greek yogurt 
  • small handful of shredded cheese (of your choice)
  • Salt and pepper to taste (or any herbs!)


  • Whisk the eggs in a bowl
  • Add all ingredients to said bowl
  • Mix
  • Lube up your muffin tin very well (with coconut oil or organic butter)
  • Ladle mixture into muffin tin
  • Bake on 190 for 20 min
  • Let cool for approximately 3-5 min
  • Enjoy!
