Laura’s Chicken Curry


Ingredients:

  • 1 large onion
  • 600 -800 g chicken thigh fillets
  • 1-2 tsp curry powder (depends on taste)
  • 1 can coconut cream
  • 1 cup chicken stoc
  • Capsicum
  • Zucchini
  • broccoli

Directions:

  • Fry onion in butter or lard (be generous)
  • Add thighs and fry until sealed
  • Add curry powder and stir through chicken
  • Add chicken stock and coconut cream
  • Cook for about 30 mins if you have a pressure cooker 10 mins
  • Add vegies and cook for a further 10 mins
  • Add salt and pepper to taste
