Natalie’s Spinach Salad


Ingredients:

  • spinach leaves
    Suitable for people with Coeliac Disease or Gluten Intolerance
  • pumpkin or sweet potatoes. Cubed a roasted, leave to cool
  • mushrooms, halved and roasted, leave to cool
  • pine nuts or raw slivered almonds
  • feta cheese
  • apple Cider Vinegar

Method:

Place spinach leaves in bowl and dress with a little white wine vinegar, toss.
Add pumpkin or sweet potatoe, mushrooms and pinenuts. crumble some feta. Toss gently.
Eat.
