- spinach leaves
- pumpkin or sweet potatoes. Cubed a roasted, leave to cool
- mushrooms, halved and roasted, leave to cool
- pine nuts or raw slivered almonds
- feta cheese
- apple Cider Vinegar
Place spinach leaves in bowl and dress with a little white wine vinegar, toss.
Add pumpkin or sweet potatoe, mushrooms and pinenuts. crumble some feta. Toss gently.
