Pork (or Chicken) Rissoles



  • 1kg Pork (or Chicken) Mince
  • 1/2 cup Basan Flour (Chickpea Flour)
  • 1 cup of extra Basan Flour for coating
  • 1 medium Zucchini, grated
  • 1 medium Carrot, grated
  • 1 large Brown Onion, grated
  • 2 cloves of Garlic, crushed
  • 1/2 teaspoon Thyme, dry (if using fresh then 1-2 sprigs)
  • 6 Eggs
  • Any other veggies of your choice; can use diced capsicum, chillies, etc
  • 100g of Organic Butter for pan frying


  • Mix all ingredients together, excluding the extra Basan Flour and Butter
  • Will make a very sloppy consistency
  • Gently prepare mixture into balls of about 40-50g
  • Place extra Basan flour in a bowl
  • Melt Butter in a pan
  • Carefully coat rissoles in Basan Flour (this will firm them up)
  • Flatten rissoles slightly
  • Pan fry rissoles til cooked on both sides
  • Will be crispy on the outside and soft on the inside

Serve with any of your fave vegetables or salad. I have these as ‘fast food’ and serve with peas and corn to keep the kids happy

Makes about 20 Rissoles

Can be Frozen, raw or cooked, and used at a later date.
