Banana Pancakes

Ingredients:Banana Pancakes

  • 1ripe Banana
  • 3 Eggs, whole
  • 1 tablespoon of Coconut Flour
  • Organic Butter for frying


  • Add eggs, banana and coconut flour in a mixing bowl and beat with electric beater for a minute (I use a Bamix) until well combined and runny
  • Melt a smidge of butter in a pan
  • Spoon some mixture into the pan (I make them into pickelet size)
  • Once cooked on one side, flip onto other side

Makes about 6-8 pickelets

Perfect for post training

Serve with berries or Granola
