Chicken Curry

Chicken Curry with Cabbage


  • 1kg Chicken Tenderloins
  • 1/2 green Cabbage
  • Handful of Pine nuts
  • 2 Tablespoons of Dessicated Coconut
  • 1 teaspoon of Curry (or more if you prefer)
  • 1/2 cup of Coconut Cream
  • 1/2 of Coconut Water
  • 2 tablespoons of Organic Butter


  • Melt butter in a pan
  • Brown chicken
  • Add curry and stir through well
  • Add coconut water and coconut cream, and simmer on low for about 5-10 minutes until chicken is cooked
  • Add cabbage and cook til just wilted
  • Serve in a plate and sprinkle dessicated coconut and pine nuts over the top
