Clean Choc Chip, Fruit & Nut Bars

Fruit & Nut BarsIngredients:

  • 2 Cups Sesame Seeds
  • 1.5 Cups Raw Cashews
  • 1 Cup Almonds
  • 8 Dried Apricots finely chopped
  • 1/2 Cup Coconut Chips
  • 1/8 Chia Seeds
  • 1 Cup Raw Honey
  • 1/4 Cup Cacao Crunch
  • 1 Teaspoon Cinnamon
  • 1/4 Cup of Coconut Sugar


  1. In a large pot, on a low flame, lightly toast the cashews and the almonds together
  2. Remove into a separate container
  3. Lightly toast the coconut chips with cinnamon
  4. Remove into bowl with the cashews and almonds
  5. Lightly toast the sesame seeds
  6. When sesame seeds are just golden, add the apricots and warm through to infuse the flavours
  7. Add the chia seeds and cacao crunch to sesame mixture
  8. Warm through for a minute or so then remove into bowl with rest of ingredients
  9. Pour in honey and coconut sugar and simmer for a minute til it bubbles
  10. Add rest of ingredients and mix through. Will make a thick gluggy mixture
  11. Place baking paper in 2 Lamington tins
  12. Pour half the mixture into one tin and the rest in the other
  13. Using a butter knife flatten mixture into tin.
  14. Place another layer of baking paper on top of the mixture
  15. Put oven mitts on and flatten the mixture firmly to bind it all together
  16. Allow to cool at room temperature overnight or for at least 4 hours
  17. Once firm, remove from Lamington tin and place onto chopping board. Slice into desired sized bars
  18. To store, layer baking paper in an air tight container, and place bars on the paper. Keep layering paper and bars.

These are ideal for school lunchboxes, as a treat snack for those aiming at weight loss, or a healthy snack for those at goal weight.
