Delicious Chicken & Veggie Soup with a Coconut Twist

Ingredients:Chicken & Veggie Soup

  • 1 kg of your favorite chicken cut (with bones), I use roasting thigh cuts
  • 1 Fennel Head roughly chopped in small pieces
  • 4 Celery stalks sliced thinly, include some leaves
  • 2 Brown Onions roughly chopped
  • 3 medium Carrots, thinly sliced
  • 1 large Leek finely chopped
  • 300g of finely diced bacon (an use bacon hock instead)
  • 1 tablespoon Tamari (gluten free Soy Sauce)
  • 1 teaspoon of freshly grated Ginger
  • 2 cloves crushed Garlic
  • 2 liters of Coconut Water
  • 1 can of Coconut Cream


  • Place all ingredients into a slow cooker and cook on low for 7 hours
  • Serve with organic butter pan fried slices of butternut pumpkin
  • I also sprinkle some chilli flakes over the top to help my immune system further
