Fructose Free San Choy Bao


Ingredients:Fructose Free San Choy Bao

  • 1 teaspoon fresh grated Ginger
  • 1kg Pork or Beef mince (or can do half and half)
  • 1 Leek finely sliced (do not include if you for 100% fructose free)
  • 1/2 Red Capsicum finely diced
  • 3 cloves of crushed Garlic (do not include if you for 100% fructose free)
  • 1 medium Zucchini finely diced
  • handful of chopped Coriander
  • 1 medium Carrot finely diced
  • 2 stalks of Celery finely sliced
  • 100g or so of mushrooms finely diced
  • 1 tin of Crushed Tomatoes
  • 1/2 teaspoon of Cinnamon
  • 3 tablespoons organic gluten free Soy Sauce
  • 1 cup Beef Stock (Home made preferably, if not use organic and gluten free)
  • 1 tablespoon coconut oil (if want it dairy free) or Organic Butter
  • 1 ice-berg lettuce

Directions:

  • Melt coconut oil or butter in a wok or pot
  • Brown all mince until cooked through
  • Add leek and garlic and cook til leek is soft
  • Add rest of vegies
  • Cook until vegies are just about to start softening (about 5-10 minutes)
  • Add all condiments
  • Cook for a further 10-15 mins
  • Whilst meat is cooking, wash through lettuce and pat dry with paper towel
  • Separate lettuce cups
  • Serve mince into lettuce cups
  • Fold into little parcels and eat with hands!
  • If you can’t get them to sit in lettuce cups, chop up the lettuce and spread over plate. Then spoon mince over the lettuce and eat with a fork
