Paleo Berry Muffins


Ingredients:Paleo Berry Muffins

  • 1/3 cup coconut flour
  • 4 eggs
  • 1 tspn cinnamon
  • 2 tablespoons honey or rice malt syrup
  • 1 ripe banana mashed
  • 1/2 cup fresh or frozen berries
  • 1 tspn vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/2 tspn baking soda
  • Pinch salt

Directions:

Combine all ingredients EXCEPT coconut flour, baking soda and berries in a large bowl and blend on low speed with stand/hand mixer. Add coconut flour and baking soda and mix well. Fold through berries. Fill muffin cases to 2/3 full and place in preheated oven at 180 degrees Celsius for approx 18-20 mins or until tops spring back when lightly touched.
