Pork Stir Fry


Pork stir Fry

Ingredients:

  • 1 teaspoon dry ground ginger
  • 1kg Pork Fillets, thinly sliced
  • 1 brown onion finely diced
  • 1/2 red capsicum finely diced
  • 3 cloves of crushed garlic
  • 1/2 medium zucchini finely diced
  • handful of chopped coriander
  • 1 medium carrot finely diced
  • 1/3 cup of organic gluten free oyster sauce
  • 1 tablespoon organic gluten free soy sauce
  • 3 teaspoons of gluten free corn starch diluted in 1/4 cup of cold water
  • 1 tablespoon tomato passata sauce, sugar free
  • 1 tablespoon coconut oil
  • 1 ice-berg lettuce

Directions:

  • Melt coconut oil in a wok or pot
  • Brown all mince until cooked through
  • Add all vegies
  • Cook until vegies are just about to start softening (about 5 minutes)
  • Add all condiments except corn starch
  • Cook for a further 2 mins
  • Add corn starch
  • Cook a min
  • Switch off flame
  • Wash through lettuce and pat dry with paper towel
  • Roughly chop up lettuce
  • Place 2 handfuls of lettuce on each plate
  • Season with Himalayan salt if desired
  • Spoon generous serve of Pork Stir Fry over lettuce mound
