Stuffed Mushrooms


Ingredients:Stuffed Mushrooms

  • 6 large flat Mushrooms
  • 1 large Tomato, finely chopped (crushed almost)
  • 2 tablespoons of finely diced Chives
  • 50g of finely diced Ham
  • 1 tablespoon finely chopped fennel leaves (can use the bulb if prefer)
  • A sprinkle of cracked Pepper
  • 1/2 clove of Garlic crushed
  • 2 tablespoons of finely diced red Capsicum
  • Optional Dried Chilli to taste

Directions:

  • Preheat moderate oven
  • Remove stem from mushrooms and finely dice, setting it aside with rest of ingredients
  • Wipe mushrooms down thoroughly with a tissue removing any soil
  • Combine all of the rest of the ingredients in a bowl thoroughly
  • Spoon filling into mushrooms and press down firmly
  • Place baking paper in bottom of a deepish tray (the mushrooms release juice so if you use a flat tray you will dirty your oven; I learned that the hard way!)
  • Place mushrooms on the baking paper
  • Place in oven and bake for about 40-50 mins until cooked through
  • Serve as a side dish or snack
